The Link Franklin BBQ just got written up in Food and Wine magazine as some of the best BBQ in the country. We made this recipe with pork loin and it was very good. B/c the rub makes a ton, I made it with 2 tablespoons of pepper and one tablespoon of salt and one of sugar. That was enough for two large pieces of loin. But, it was heavy on the pepper, so we added about half a tablespoon more of sugar and salt. The sauce was good, but there was two much vinegar. I would try it with only 8 ounces of vinegar, and half a cup of sugar instead of the 1/4 cup. All you have to do it mix the ingredients well and let them sit overnight in an air-tight container. it doesn't taste so hot by itself but is great on the meat. I also tweaked it with more paprika and catchup. You just have to play with it a bit until it's right.
One can never have enough pulled porl. Aw, damnit--you corrected it! But, seriously, you're making pulled pork with the loin? I suppose there's more than one way to skin a pig, but I thought it was either whole hog or butt when it comes to pulled pork.

Yep they use mustard. I lived there for a year and I was chastised on more than one occasion for using the "ketchup".
I used to live in North Carolina, and generally speaking you find more ketchup-based saues in the western part of the state, and mustard-based sauses in the eastern part, both heavy on the vinegar. I've also never done pulled pork with a loin. I've always smoked a shoulder.
I bought the loin before LHF68 found the recipe, so we just went with it. We cubed it, not shredded it. For the record, I don't eat beef.
sorry you can't eat beef Smurfette. I guess I never noticed that on here. My comment was really in reference to a several rib threads. I used the phrase 'step up to cow' in reference to the superior flavour and leanness of beef ribs. We had a friend whose daughter was allergic to beef. I never could imagine not being able to eat it.
THEU, your arrogance when it comes to food always astounds me. Does it ever occur to you that other people may have different tastes than your own? You do it over and over again.. I guess it ties in with your religious views...
chango, 'step up to cow' was started as a phrase to be funny. I did not mean to hurt anyone's feelings. It was to be taken tongue in cheek, and also pay homage to Texas and idea that Texas BBQ is traditionally beef. That is all. If you are referring to 3 things on here that I do 'rant' about with regards to food... well, I am not trying to be a jerk. Those three things I think are okra/gumbo... mustard on a hamburger, and beef ribs. In the grand scheme they are meaningless. I know that, and thought everyone on here knew that. That is one of the reasons I think it is fun to go round in round with folks about food on here. It is just a message board about food. Also, I have no idea how pork v. beef bbq has anything to do with my religious views at all. I don't know where you got that. So again... if I was offensive by making a comment in jest about beef bbq, then I apologise.
Utee, if there are beans in it... it isn't chili, but some type of bean soup...... lol... I mean I can say that seriously, but still.. I am not offended really or whatever... it is just joking around on a thread about food.
