Waiters at Lubys

    I have already got my tray to the table, I don't need a "waiter" bugging on me. This is not right. What happened to the tea lady pushing her cart around the dining room? That is all you need, old style Lubys tea lady thank you very much.

    Now it is some guy stopping by every 5 minutes asking if I want Tabasco or something for my angus chopped steak, am I supposed to leave a tip on the table for this or what? This is a travesty, I want the tea lady back.

    We just kept it at half-mast...every time they brought something to the table, somebody else was needing something :)

    The sopas were the best part. When I was in school and had to eat out on Sundays, it was real cheap! There were some things you knew not to select, but loading up on sopas was always safe.

    Anybody remember the 3 chicken-fried steaks plate at The Stallion? It was like $2.75 or some ridiculously low price.

    That's how I remember Luby's. They usually got some bug-wit to come around with a cart with tea or water. No waiters...what's the point in that?

    It's like having a tip line on the receipt when I buy Mr. Gattis buffet. I only tip at full service establishments. I refuse to tip when I stand in line, get my own food and all they do is clean the table or offer a refill once or twice.

    Is the restaurant industry the only one where the majority of an employee’s compensation comes via gratuity?

    I waited tables for a while in Austin and I always thought it was interesting that they would only pay us a couple dollars per hour and let the customers pick up the bulk of our pay, but it works. The restaurant is getting wait staff labor for almost nothing.

    I think you are right. But those people bussing tables and serving coffee at Starbucks or walking around Luby's asking for tips are getting regular pay. I always tip well at full service restaurants as long as they dont suck.

    Growing up (in the Houston suburbs), the Luby's that we frequented had a mentally challenged tea lady. She was friendly and got the job done. A tip was never expected and was never given.

    Now (in the DFW area), the Luby's I took my wife and kids to recently went out of business.

    40 years ago, that would be no problem--just go to Wyatt's or Piccadilly's. No such thing anymore... The cafeteria model simply doesn't appeal to the younger generations and is going extinct.

    Chris & Harris Pappas are the only Greeks who do not know how to run a cafeteria and turn a profit. Senator Phil Gramm's son created and runs a hedge fund that has a large stake in Luby's, and recently attempted a hostile takeover, which a court rejected.

    Now the Aggies are seeking franchisees that will buy the surviving Luby's and Fuddruckers. Every franchise opportunity I've ever looked at promoted how much money you would make. How do you franchise a location losing money?

    The Aggies Pappas have a situation in Port Arthur that is comical. They have an old, yet profitable location at Twin City and 73. The tea/water lady there is named "Maria", who is very proud she has a loyal list of "her customers". (I can safely say that if you tried to tip Maria. you would probably wear that tea pitcher home.) Maria has been there for 30+ years and is good friends with Chris & Harris' mother (they went to HS together).

    When the know it all marketing gurus (undoubtedly more Aggies) informed the Aggies Pappas what a great idea it would be to build the beta concept site on a Central Mall pad site, the Pappas' immediately offered Maria a "concierge" position at the new location. She not only refused but according to her went straight to the boys' mother to tell her "they had lost it" and how "insulting it was to her and her customers".

    The new concept with it's sports bar and TVs has not done well, but at last search, Maria and her customers were still on Twin City Hwy.

    Last time I was in a Lubys, they had fancy bowls, not pans on steam table. They also had NO chopped steak, NO blackeyed peas, and NO mashed potatoes. They did, however have a Luann platter for only $12+.
