I recently discovered birria tacos and the savory spicy greasy caldo on the side. Why did I never know of this glorious fare before? I intend to work my way through the entire menu at this place. Homemade 3 pepper cheese steak, trying for the same taste as from Lupe Tortillas. Started with a prime grade sirloin - I'd used skirt steak before, and it was too tough. Plus it costs as much as real steak that's on sale anymore, as fajita meat is popular. Soaked in lime juice overnight, then seasoned it up with a homemade spice blend of chili pepper, cumin, oregano, paprika, and some hot pepper spice. Fired up the ceramic grill, direct head, up to 400 F. Seared the peppers and put them off to the side. Then steak on, with a melted butter poured on for flavor, and for it to hit the coals and make a smoky atmosphere for the meat to cook it. Just a few minutes on each side, put pepper jack cheese on, and served with smoked tortillas from the grill as well. Most excellent.
Generally, never order lamb in the US. It's terrible! I thought it was the meat itself till I had it in Europe, where it was good. If you cook it yourself, it can be most excellent, with a slightly different taste than beef, and flavor of its own. This was a leg of lamb - butterfy cut (for easy slicing off the bone when done), then tied back up for the grill. Reverse seared - low heat till 125 F, then direct, high heat (500 F grill temp) for the outer sear.

I found another little gem of a place close to home, Casa Del Sol. Took the wife this morning. I had migas, a side of bacon, and a chorizo & egg taco, she had potato & egg tacos. The tortillas are made there and are perfect. It was so good! I scribbled my name on a chair and told them to keep it open. Even the coffee mug was a beauty, imo. Can you believe @Mr. Deez wants to cancel breakfast tacos? It is unAmerican, this evil taco hatred.
And hole in the wall Mexican joints are either AWESOME or AWFUL. I guess Dion found one of the former.

My wife does, but I don’t do much caldo. Menudo, you either love it or hate it. I love hominy so big fan of menudo, tho it’s not easy finding good restaurant menudo. I prefer mine more basic Mex Tex.
