This one is really obscure and unless you have the video you have never heard it but Natalie Cole did a great version of "Ticket To Ride" at a Lennon tribute concert back in the late 89's or early ninties. way cool!

The Byrds version of Dylans "You aint goin nowhere" is fantastic as is Eric Clapton's version of "Don't think twice its alright" from the Dylan tribute concert
Gary Jules version of Tears for Fears' Mad World is a ton better than the original. I also like Guns n Roses cover of Knockin' on Heavens Door and Metallica's cover of Turn the Page

I agree with PFD regarding The Fugees" Killing Me Softly. I thought it was amazing. My favorite cover is Joe Cocker's A Little Help From my Friends. Rarely, in my opinion, does a cover exceed the original (almost all of them are just different, but not better) but Cocker nails it.
Texanne, are you saying you think Stringsteen's Blinded by the Light is as good as Manfred Mann? I thought you hated The Boss.
I do hate Springsteen. That's why I haven't heard his version -- I don't listen to him. There are thousands of covers I've never heard, but of the ones I have, I've thought the original was better in almost all of the cases.
