I am taking the wife to the river walk next weekend, and wanted to know what the best route from Dallas to San Antonio would be if we wanted to see the hill country in all its splendor. We dont mind adding a few hours on to the drive as long as the view and stops will be worth it.

    Thanks in advance.

Try hooking up with 281, starting as far north as makes sense for you.

I would suggest the following route.

Take 67 out of Dallas all the way through Glen Rose, to Chalk Mountain where you turn left on 220 south. The drive between Glen Rose and Chalk Mountain is very cool.
Take 220 to Hico where you can pick up 281. If you want to continue south all the way to SA that would be fine, but I also offer a bit longer but more beautiful route as well.

At Evant turn rt (west) on 84 and go to Goldthwaite. From there take 16 south. This will take you through San Saba and Llano, down to Fredricksburg. From there take either 16 or 87 down to I 10.
This isn't the most direct route, but it is a nice drive.
