Was thinking of getting one of the newer models with the removable plates, but I heard that those don't get hot enough for grilling and you end up getting more of a 'steamed' meat.

Any users have any thoughts on which particular model to purchase?

I bought a small one with the removable plates and it works great for me. Can't remember the exact model but I can fit two t-bone steaks without a problem. I had one without the removable plates and it was a pain to clean.

I have this model and it's a pretty decent backp. If you don't turn the heat up nearly all the way then you do end up steaming your food, but I cooked some chicken on ours the other day (didn't have any charcoal for the real grill) and it came out fairly tasty. A couple of months ago I tried basting some chicken with sweet baby rays bbq sauce, but that didn't go too well for some reason (probably not hot enough). Overall it's an OK griller, and if you're not a serious BBQ'er then you should be fine getting one.
