This is about a 2lb cap through ButcherBox. I've done a few in the oven but decided to try one over mesquite. Rubbed it last night and pulled it out this morning to come closer to room temp. Next time, I would take it out of the pit at 1:30 instead of 1:45. Still tasty though...
