Paletas de Frutas

    Inspired by yesterday's episode of Rick Bayless' Mexico: One Plate at a Time, this is really fun to do with little kids.


    2/3 cup lime juice
    3/4 cup sugar
    2 cups club soda or sparkling water
    Frozen fruit

    Stir sugar into the lime juice until sugar dissolves. Stir in club soda.
    Fill ice pop molds loosely with chunks of frozen fruit (we used mango, strawberry, and banana)
    Fill molds with lime juice mixture
    Top the molds w/ saran wrap or their lids and add popsicle sticks and throw them in the freezer
    Tell the 3-year-old that the popsicles will be ready as soon as she's up from her nap.
    Pour some of the leftover lime juice mix over crushed ice with a little extra club soda and enjoy a refreshing limonada along with some peace and quiet.

    Bayless crushed some mint into the sugar. Alas, I have no mint.
    Note to self: grow mint.
