This is a good pumpkin cheesecake recipe: Pumpkin Cheesecake We use pumpkin pie mix (instead of pumpkin and spices), we also substitute a ginger snap crust. It is awesome.
I recently saw a recipe with 3/4 cup of honey added to the traditional pumpkin pie recipe....sounded pretty darn good ("Honey Pumpkin Pie"). The ginger snap crust sounds like a winner. Do you make that pretty much the same as a graham cracker crust?
Yeah, canned pumpkin works great -- pumpkin you prep yourself doesn't taste any better in a pie. If you must, get one of those small pie pumpkins, not a big carving one.
I disagree, the wife made a pie from a fresh pumpkin a couple of years ago. That one was more flavorful than any I'd had before.
