I know that eating food cooked in/with lard is basically the equivalent of just painting the insides of my arteries with the stuff. But, I just can't imagine using anything else when I make my homemade tamales, gorditas, mexican rice, or fry chile rellenos. Which is I guess the reason that I don't cook those things all that often.
