Stubbs was 1 of the best BBQ joints ever...when it was in Lubbuttock. Mr. Stubbs was on premise at all times when the resturaunt was open. He personally oversaw the cooking & made the sauce himself with whatever was "on the island." It was never the exact same twice, but was ALWAYS fabulous.
When Mr. Stubbs moved to Austin & sold the "rights" to his name brand, the recipe was standardized & it, IMHO sucks. Went from being 1 of the best to only slightly better than Appleby's (maybe).
Too bad for Lubbuttockites, Stubbs was one of the ONLY benefits to living there at that time. Last time I moved to Lubbock, one of the 1st things I did was drive out to E. Broadway only to find that Mr. Stubbs establishment was shuttered...moved to Austin. I was sorely disappointed. Even more disappointed next time I was in Austin and ate @ Stubbs. Not the same...only a ghost of the former self...only slightly better than Appleby's (maybe).
